Local man wins blue ribbon for cheesecake | Collierville Independent

Kreig Taylor of Collierville won first place in the new Sweet-Treats for Sweet-Hearts Contest at the 2013 Delta Fair for his Strawberry Delight Cheesecake. Taylor won a $125 cash prize for his cake.

Strawberry Delight Cheesecake

• Cake Layer:

1/4 cup Karo Corn Syrup

1 box strawberry cake mix

• Cheesecake Layer:

3 (8 ounce) packages cream cheese, softened

1/2 cup sugar

1/4 cup Karo Corn Syrup

3 large eggs

1 1/2 teaspoons vanilla extract

• Filling:

1 container strawberry glaze

8 – 10 fresh strawberries, chopped

• Chocolate Frosting:

3 cups confectioners’ sugar

1/2 cup unsweetened cocoa

1 stick butter, softened

1 (3.9 ounce) package instant chocolate pudding mix

1/4 cup Karo Corn Syrup

3 – 4 tablespoons heavy cream

1 teaspoon vanilla

Strawberry Cream

• Topping:

2 cups heavy cream

1/4 cup sugar

1/2 cup strawberry preserves

12 strawberries, halved

For Cake Layer: Add Karo corn syrup to strawberry cake mix and bake as directed for two round cakes. Cool completely. Recipe uses only one layer of the cake.

For Cheesecake Layer: Preheat oven to 350 degrees. In a large bowl, beat cream cheese with sugar in an electric mixer at medium speed until smooth. Then add Karo corn syrup and eggs, 1 at a time, and vanilla. Stir to combine. Pour into 8-inch round pan. Bake 20 minutes or until firm.

Cool completely.

For Filling: In a saucepan, mix together strawberry glaze and fresh chopped strawberries until berries are soft.

For Chocolate Frosting: Sift together sugar and cocoa into a large bowl. In another bowl, combine 1 cup of sugar mixture with butter, chocolate pudding, Karo corn syrup and 1 tablespoon cream, beating until smooth.

Add another cup of sugar and another tablespoon of cream, beating well. Continue until all ingredients are combined and frosting is fluffy. Beat in vanilla.

For Strawberry Topping: Whip heavy cream and slowly add sugar. Fold in strawberry preserves.

To Assemble: Place first cake layer on cake plate. Top with a light layer of strawberry glaze mixture. Gently top with cheesecake. Frost entire cake. Store in refrigerator if you are not working on it. Make a circle of strawberries around the top of the cake. Gently spread strawberry cream on top.tayler
