New chicken restaurant expected to open on Poplar

Collierville’s Poplar Ave. gateway is slated to gain another fast food chain specializing in fried chicken. 

Slim Chickens, an Arkansas-based restaurant chain, is preparing to open seven stores throughout the Mid-South in the next five years, including a location at the southeast corner of Poplar Ave. and Maynard Way.

On Monday, the town’s Board of Mayor and Aldermen will discuss the preliminary site plan for the 3,524-square-foot drive-through restaurant on 1.4 acres. 

Slim Chickens is a “fast-casual restaurant chain which specializes in chicken tenders and wings.” It was founded in 2003 inside a former sushi restaurant in Fayetteville, Ark.

There are currently more than 70 locations in 14 U.S. states, Kuwait and London.

The goal is to have 600 locations worldwide within 10 years. 

The Collierville site will connect to the existing private drive to the west (Aldi’s Grocery Store) and will have the right to use a shared access point located to the east (Thrasher Clinic). 

In related news: 

• Board members will vote to approve a $27,500 contract for drainage improvements at Lawnwood Drive and Rhetts Way. 

• Board members will vote to amend the town’s Municipal Code to impose a $5 fee on any traffic citation that results in a plea of guilty or a judgement of guilt for traffic offenses. Of the fee, $4 will be maintained in a Police Department special revenue account for the “sole purpose of developing and operating an electronic traffic citation system.” The remaining $1 will go toward financing computer hardware purchases in the Town Court Clerk office. 

• Board members will vote to cancel the Dec. 23 meeting for the holidays.
